Hot holding units are getting adjusted in a different manner. Max temperature on the dial is kept from start of use, and not getting turned down. Rice containers are getting covered to decrease heat escaping. Product temperatures measured 59C - 70C at time of inspection
Utensils at grill line are getting stored in ice baths. OK.
Raw is separated from cooked meat utensils. Good
Salads and veggies in prep cooler now with lids. Good
Records have been adjusted to include minimum standards, product hot holding, and dishwasher concentration

Unknown shelf stability of sauces remain. They are to be held on ice, as discussed until they are proven shelf stable
Spoke with regional corporate manager by telephone during inspection, laboratory results are allegedly available and to be sent to your EHO via fax, e-mail or drop off by tonight.
Once results are verified by your EHO, in writing, you may begin storing your sauces at room temp as before.
