Observation (CORRECTED DURING INSPECTION): - Scoop and bowl used for dispensing cooked rice were stored in water at ambient temperature.
Corrective Action(s): Use proper scoop for rice (not a bowl). Keep in use rice scoop in a clean container or a container of ice water (4C or less) or hot water (60C or higher). Clean and sanitize scoop (in dishwasher) at least every 4 hours or replace with clean scoop.

Observation: - Food splatter noted on sections of wall and grime noted on lower portions of walls (near floor)
- Debris grime noted along edges of floor in dry strorage room and between chest freezer and upright freezer
- Paint noted to be peeling from sections of ceiling and wall in kitchen
Corrective Action(s): - Clean/scrub walls to remove food splatter and grime.
- Clean/scrubs edges of floor to remove debris/grime.
- Remove all peeling paint and repair/re-paint surface so that it is maintained in a smooth, washable condition.

Observation (CORRECTED DURING INSPECTION): - Whisk was in use; however, handle was broken. Cracks/crevices present which do not allow utensil to be properly cleaned and sanitized.
Corrective Action(s): - Whisk was discarded at time of inspection. Ensure utensils used are in good repair. Discard items which are broken.

Comments

- Handwashing sinks (kitchen and front server area) were supplied with liquid soap and paper towel
- Coolers were operating at required temperature (4C or colder) and freezers were maintaining food products in a frozen state
- Temperatures checked:
- Front fridge/freezer 4C/-9C
- Single door reach in cooler 4C
- Line cooler 3C
- Sliding door cooler 4C
- Single door reach in freezer -19C
- Chest freezer -9C
- Food products in coolers were covered/wrapped and raw meat was stored beneath ready to eat items and produce.
- Hot held foods were maintained above 60C. Cooked rice: 70C Curry broths 71-73C
- Observed recently prepared red curry broth being cooled in ice bath in food prep sink. Ensure ice is replenished and broth is stirred to cool food rapidly.
- Bleach solution present in buckets in kitchen and front server area for in use wiping cloths. Concentration measured 100-200ppm chlorine.
- Dishwasher was operational. 50ppm chlorine was detected on dish.
Note: Dishwasher was not initially turned on and had to be run a few times for chlorine residual to be detected. Ensure dishwasher is turned on while food premises is in operation and ensure sanitizer concentration is checked prior to use.
- No signs of pest activity noted. Pest control contract in place with regular service.
- Staff/public washroom maintained with liquid soap and paper towel
- Health permit posted.
- Operator present and has valid foodsafe level 1 certificate.
Note: Operator reported they are in the process of replacing sections of flooring which were damaged. Sections which had been replaced were noted. Operator reported remaining sections to be completed within a month. Ensure there are no cracks/crevices present in flooring that can allow for food and debris to collect.
