Observation (CORRECTED DURING INSPECTION): Hams for sampling were placed on top of cooler counter at 10C.
Corrective Action(s): Ensure all sampling foods also need to be stored in cooler. Relocated sampled food to cooler underneath.

Observation (CORRECTED DURING INSPECTION): Chicken wings (salt & pepper, honey garlic, hot), thighs from rotisserie chicken and whole chicken were measured at 55 to 59C in the hot cases.
Corrective Action(s): Reheated wings and thigns in the oven and whole chicken were taken to be shredded for pot pies. Ensure to keep hot case door fully closed and take corrective action if and when temperatures of these hot food are below 60C.

Observation (CORRECTED DURING INSPECTION): Meat and deli slicers are informed by staff to be cleaned and sanitized everyday or when it appears dirty, depending on use.
Corrective Action(s): Slicers must be cleaned and sanitized every 4 hours at minimum. Have manager inform all staff of this requirement.

Observation: Lots of food debris in non working freezer where gloves are stored, also on flooring of walk-in cooler on hot food side, flooring under three compartment sinks and counters of two compartment sink on hot food side.
Corrective Action(s): Have all these areas properly cleaned up by next follow up.
