Observation (CORRECTED DURING INSPECTION): 0 ppm QUATS sanitizer was measured inside two containers and one spray bottle in the prep. line area.
Corrective Action(s): Staff member refilled the sanitizer to 200 ppm inside the spray bottle and two containers. Make sure the sanitizer is changed frequently (e.g. every 2-3 hours) to maintain 200 ppm QUATS sanitizer.

Comments

Handsinks were supplied with liquid soap, hot and cold running water, and paper towels.
Walk-in-cooler and other coolers were at or below 4 degrees C.
Freezers were at or below -18 degrees C.
Hot-held food (including rice) was at or above 60 degrees C.
Dishwasher final rinse chlorine sanitizer residual at the plate was at 100 ppm (minimal required: 50 ppm unless otherwise stated by manufacturer's specifications).
Glasswasher final rinse iodine sanitizer residual was 12.5 ppm.
200 ppm QUATS sanitizer was available in the spray bottle in the bar and from the dispenser.
No signs of recent pest activity were evident at the time of inspection.
Ice machine was in a clean condition.
Dipper well was in use at the time of inspection.
Night Manager had a FOODSAFE level 1 certificate valid until July 10, 2023.

Note: A box of raw red peppers was stored on shelf in the walk-in-cooler below the shelf with steak being thawed in its' original packaging. Staff mentioned that the red peppers would undergo a heat/cook step. The steak was still re-organized to be stored below the raw vegetables however in case they are used as a ready to eat product. No signs of visible contamination or drippings meat juices was evident.
