Observation (CORRECTED DURING INSPECTION): Quat concentration in several sanitizer buckets 50-100 ppm. Hot water supply to quat dispenser not turned on.
Ensure 200 ppm quats is made as per manufacturer's instruction. Use test strips to measure the strength.
Corrective Action(s): Operator turned on the hot water supply. Quats now being dispensed @ 200 ppm. Instructed to refill all sanitizer buckets.

Non-Critical Hazards: There are no non-critical hazards.

Temperature log sheet is kept updated.
General cleanliness is satisfactory.
2 door freezer @-18C
Dessert cooler @ 1C
Ice cream freeze -19C
Dipper well was in use with running water.
Both prep coolers were at 4C or colder.
Small prep cooler is less than 4C
Under grill cooler air temp observed to be under 1C
Internal food temp is less than 4C
Hot holding unit is 60C
Deep fried station prep cooler with inserts is less than 4C
Back area/Prep area:
Hand sink provided with hot/cold running water, liquid soap, paper towels.
General cleanliness is satisfactory.
Walk in cooler is at less than 4C. Food is organized and stored above the floor.

Dish washer surface temp observed to be at 76C
Quats dispenser after adjustment dispensing quats @200 ppm
