Reviewed cooling procedures. Cooling records well maintained for all cooled foods since previous inspection. Cooling black beans still over 60 C at time of inspection. 2 door upright cooler 2 C, ensure product is arranged to promote air flow between shelves. Ice wand safely stored, wrapped with plastic wrap. Dry storage area re-organized, food items separated from non-food related items. Reviewed food insert refilling - new product is placed in a new food insert and replace previous batch of product when empty. Wiping rags stored in 200 ppm Quaternary Ammonia 3 compartment sink correctly set-up for manual dishwashing process.
