Observation (CORRECTED DURING INSPECTION): No sanitizer available for use. When asked, operator had provided a bucket filled with orange cleaner. 200ppm chlorine solution was prepared at this time.
Corrective Action(s): Ensure to have 100-200ppm chlorine solution available before/during each operation. All prep surfaces must be sanitized using this solution before initiating any food prep for the day.

- Walk-in cooler <4°C; Walk-in freezer <-18°C.
- Designated storage space available for packages/perishable/frozen foods.
- Low temperature dishwasher achieved >50ppm chlorine at the plate level after final rinse.
- No evidence of pest activity observed.
- General food storage practice satisfactory.
