Observation (CORRECTED DURING INSPECTION): Hand sink that was removed from main kitchen area has not been re-installed.
Corrective Action(s): A second designated hand sink is required in the main kitchen/food preparation area. The designated food preparation sink is only to be used for food prep and is not a hand washing sink.
Food prep sink can only be used for hand washing temporarily, until the second hand sink has been re-installed.

Corrective Action(s): As previously stated, changes cannot be made to the equipment and layout of facility without review by a health inspector and health approval. Re-install hand sink either in same location or new, more convenient/accessible location by the food preparation sink.

Comments

- Operator requested a month's time to have the hand sink installed in a new location (by the food preparation sink). OK.
- CORRECTION ORDER ISSUED. See violations above.

General comments for the follow-up inspection:
- Walk-in cooler is now organized such that raw meats are stored below ready-to-eat food items
- Insides of prep coolers have been cleaned and sanitized, including doors and seals
- Ventilation canopy filters have been cleaned/replaced
- Base of dough machine was observed to be clean
- Garbage bags are no longer in use to store/cover food - good.
- All foods were properly covered
- No opened tin can being used to store food.

*A follow-up inspection is scheduled for one month from today. Ensure outstanding violations have been corrected by the follow-up inspection.
