-After servicing the high temperature dishwasher, the final rinse temperatures at the plate level were still not consistent. The highest reading was 77C while the lowest reading was 69C. The dishwasher could not maintain the final rinse temperature at the plate level after heavy uses within a short period of time. This is an outstanding violation from the previous routine inspection.
Service/fix the high temperature dishwasher to ensure at least 71C is maintained during the final rinse cycle at the plate level at all times. In the meantime, manually ware wash all utensils or wash and rinse with the kitchen dishwasher and sanitize manually. Correct immediately.
