Observation (CORRECTED DURING INSPECTION): -Both 2-door display fridges are too warm: left 2-door display at 7.9 deg C air temperature -internal temperature of sauce 8.2 deg C
-right 2-door display fridge at 8.1 deg C air temperature -internal temperature of shrimp at 7.8 deg C
-Perishable foods are placed in ice trays during lunch/dinner rush hours then placed back in the fridge as per worker -no time tracking sheets are maintained
Corrective Action(s): -Remove all perishables from units into the front display fridge or the freezers.

Operator adjusted thermostats to the coldest settings. Check temperature in 1 hour -If the fridges cannot maintain foods at or below 4 deg C then have the unit serviced today

-Do not place perishables back in the fridge -after 2 hours at room temperature discard -use small portions only to avoid this
