Observation: 1. One deceased rodent observed in lobby area outside cafeteria.
2. A moderate number of rodent droppings observed near the exit of the facility.
3. Rodent droppings also observed inside storage cabinet in lobby area.
Corrective Action(s): A thorough cleaning and sanitizing of the storage cabinet is needed. Use 1 part bleach, 9 parts water to remove all rodent droppings and saturate for ~15 minutes before removing the droppings. Contact professional pest control company immediately to reset traps and identify any remaining entry points.

Comments

Routine inspection conducted. Facility is generally in good sanitary condition; some pest activity noted outside of the kitchen. Kitchen was not in use at time of inspection

1. Temperatures
- Walk-in cooler at 3C
- Chest freezer at -12C and -18C
- *Reminder: Temperature logs need to be taken each day that the kitchen is in use*

2. Hygiene and Sanitizing
- Hand wash station adequately stocked with hot/cold running water, liquid soap, and single-use paper towels
- High-temperature dishwasher sanitizes at final rinse cycle of 74C at the plate (Min: 71C)
- Utensils and equipment is generally stored in good sanitary condition, off the floor
- Dough mixer / hook well maintained
- Ventilation canopy is generally free of accumulating grease

3. Storage
- Products are no longer directly poured into industrial-grade containers (not food-grade). Dry storage products are present inside their original bags, then placed inside the large plastic bins
- All food products kept at least 6" off the floor
- Chest freezers are now more organized than in the past routine inspection. Remember that all products should be covered when not in use

4. Pest Control
- No evidence of recent pest activity inside the kitchen. Mechanical traps did not contain any rodents. **However, one trap outside the kitchen had a deceased mouse, and rodent droppings were present near the exit**

**Please forward the most recent pest control report to the Environmental Health Officer**. Pest control company should still be arriving bi-weekly to reset traps and identify any entry points

**Note on Pests: You must continue to work with your professional pest control company and follow their directions on mitigating rodent activity in your facility. If pest activity increases and affects your cafeteria operations, you may be subject to another CLOSURE ORDER or compliance meeting.
