Routine check:
Walk-in cooler air temperature has gone down to 4.9C and may have been on defrost.
Verify walk-in temperature keeps food at 4 C or colder and keep temperature records up-to-date.
All other coolers (dining area and care side serving cooler) are at 4 C or colder.
Hot holding >60 C - good.
Dishwasher has a hot water sanitizing rinse.
Sanitizer (quats) is used for wiping cloths and for sanitizing tables, counters, etc. Follow manufacturer's directions.
Reviewed procedures for sanitizing meat slicer: 1. Wash with soap and warm water and brush; 2. Rinse with water; 3. Sanitize (quats 200ppm for 1 minute wet as per label); 4. Air dry.
