Observation:
The wall behind and above the floor gas stock pot burners has accumulated dust. This dust can fall into food and contaminate it.
Corrective Action(s):
Wash the wall with hot, soapy water to remove the accumulated dust and debris. The wall shall be cleaned every day before closing.

Observation:
The floor has exposed cement and is not sealed. The cement will absorb food and water, and is not cleanable. This will attract pests.
Corrective Action(s):
Reseal or repaint the floor with epoxy so it is durable, smooth, sealed and cleanable.

Comments

A routine inspection was completed:
- Coolers 4C or colder; freezers -18C or colder; and thermometers present.
- Hand sink stocked with liquid soap, paper towels and running hot and cold water.
- Bleach sanitizer in spray bottles and cloth buckets had [Cl2] of 200ppm.
- Foods stored in food grade containers; covered; labelled; date coded; foods stored in groups with raw proteins separate or below RTE foods; and foods stored 6" off the floor on pallets or racks.
- General sanitation level is satisfactory. Improvement needed in the mentioned areas.
- No signs of pests.
- No exhaust hood system installed above the gas stock pot burners.

ACTION
- Wash and sanitize the walls behind the gas floor stock pot burners.
- Floors require to be resealed/painted.
