Observation: Noticed rust build -up and chipped off paint on the shelves in the double door cooler (located near the triple sink). This could lead to contamination of food products stored in the cooler
Corrective Action(s): Replace the old shelves with new smooth, non-absorbent and easy to clean shelving (By June 20, 2022). Ensure all trays of fish and seafood are kept covered with lids at all times.

* Clean the walls and fan cover in the walk-in cooler to remove dust.
* Ensure to dismantle the potato fries cutter ( e.g removing the slicer) to clean and sanitize thoroughly using the dishwasher.

Hot holding of chowder and gravies >60 C
Sink and Surface Sanitizer ( Ecolab) tested 700 ppm.
Sanitizer buckets are replaced every 2-4 hours.
Dishwasher dispensed 50 ppm chlorine during the rinse cycle. Good.

Temperature logs are up to date.
Dry storage areas clean and well maintained
