Follow up to Rpt # MBEK-BDBTFJ Hot holding internal food temperatures measured at 60 degrees C or more. Note: A probe thermometer is now located within easy access to the front hot holding / reheating / cooking area. Quaternary ammonium compounds (quats) sanitizer available at a concentration of 200 ppm quats in labeled spray bottles. It was stated that staff are checking sanitizer concentration with quats test strips. It was stated that all staff have been trained in the food safety and sanitation plan procedures.
