Observation:
Heavy accumulation of dust and grease present on panels of ventilation hood canopy.
Corrective Action(s):
Clean panels of ventilation canopy. Ensure to follow your sanitation plan for daily, weekly, monthly and seasonal cleaning.

Observation (CORRECTED DURING INSPECTION):
No food surface sanitizer available at the time of inspection. THIS IS A REPEATED VIOLATION.
Corrective Action(s):
Prepare sanitizer solution in a labelled spray bottle or bucket with wiping cloth stored in the sanitizer. Ensure a concentration of 200 ppm QUAT sanitizer is available at all times of operation to ensure food contact surfaces are adequately sanitized.

NOTE: staff were not aware which button would dispense surface sanitizer. Health inspector educated the person in charge of the difference between each of the four buttons on the dispensing machine. Ensure to educate all staff on the difference of the solutions dispensed from the chemical dispensing machine and to remind staff to have surface sanitizer (QUAT = 200 ppm) at all times in the kitchen.

Routine Inspection:
Hand washing station fully equipped with liquid soap, paper towels and hot/cold running water.
Coolers maintained at 4 degrees Celsius.
Freezers maintained below -18 degrees Celsius.
QUAT sanitizer at dispenser in storage room = >200 ppm.
All food items stored off the floor.
Domestic dishwasher available with button for sanitizing cycle.
No pest activity observed at the time of inspection.

Operator signature not required due to the COVID-19 Pandemic.
