Observation:
1) Old mice droppings found in storage area under the stairs. Droppings carry bacteria.
2) Food debris, dust and cobwebs found in corners and under racks.
Corrective Action(s):
1) Remove all items under the stairs; clean and sanitize all surfaces and items; remove all unused equipment and items to eliminate harboring areas for rodents; and store all items 6" off the floor on pallets, platforms or shelves.
2) Detailed cleaning of the facility needs to be completed. Move all racks to clean the floor under them, and clean all lower shelves on racks.

Comments

A routine inspection was conducted, the following observations were made:
- Coolers 4C or colder; freezers -14C or colder; thermometers present.
- Hand sinks stocked with liquid soap, paper towels and running hot and cold water.
- Bleach sanitizer in spray bottles had [Cl2] of 100ppm. The bleach sanitizer in 3-comp dishwasher sink had [Cl2] of 200ppm. Use test strips to ensure the bleach concentration is the correct strength.
- All foods stored in food grade containers; covered; labeled; date coded; stored in groups with raw proteins separate or below RTE foods; and foods stored 6" off the floor on racks, shelves or platforsm.
- No expired foods in use. FIFO rules being followed.
- All surfaces are in good working order, durable, smooth, sealed, and cleanable.
- The leaking pipe under the 3-comp. food prep sink is fixed.
- No signs of pests.
- General sanitation level is satisfactory. Improvement needed in the mentioned areas.
