Observation (CORRECTED DURING INSPECTION): Dirty wiping rags were left on the food prep tables where the food preparation was being conducted.
Corrective Action(s): When the wiping clothes are not in use, soak them in sanitizing pail to prevent any bacterial growth on rags. Do not leave them on food prep tables as any direct contact with food could cause potential food contamination. Staff moved all the rags in bleach sanitizing pail.

Routine inspection conducted at the food facility and the following observations were made during the inspection:

No dine-in or bar services provided due to COVID-19 pandemic.

Temperature (coolers to be at 4C or less, freezers at -18C or less):
- Temperature of coolers maintained at 4C or less
- Freezers recorded at -18C or less
- Temperature logs were maintained

Storage:
- All food items were stored at least 6" off the floor.
- All food products were found either in original packaging or covered inside coolers.
- Storage area was well-organized.
- Chemicals and cleaners were stored separate from food preparation areas.

Sanitation & Maintenance:
- Hand wash station was adequately stocked with hot/cold running water, liquid soap, and single-use paper towels.
- Sanitizer spray bottle available and the concentration of QUATS noted at 200ppm.
- Sanitizer dispenser releases 200 ppm QUATS at 3-compartment sink.
- High temp mechanical dishwasher reached 80C at dish surface during rinse cycle.
- Utensils and tongs were found in sanitary condition.

Pest Management:
- Professional pest control company conducts routine checks.
- No visible signs of pest activity observed at the time of inspection.

Administrative:
- Operating permit was posted in a conspicuous location.
- Operator has valid FoodSafe Level 1 certificate
