Observation (CORRECTED DURING INSPECTION): A few packages of cookies "Stark" have pest contamination -holes in packaging -stored in retail section

Observation (CORRECTED DURING INSPECTION): #7 -1-door upright stainless, internal temperatures of yogurt, cooked potatoes and sausage rolls ranging between 12-16 deg C.
Operator indicates the foods have been there since 11am (>2hrs)

Front retail rotary display fridge for desserts ranging 14-16 deg C for custard desserts and have also been there since this morning (>2hrs)
Corrective Action(s): Discarded foods. Have both units adjusted/serviced for temperature.

Do not store foods there until it can maintain at or below 4 deg C

Observation: Mouse droppings observed in the front retail sections.

Assured Pest Control comes in bi-weekly -last work report indicates activity as well

Corrective Action(s): You must check EVERY MORNING for mouse activity and droppings for discarding contaminated foods, cleaning and sanitizing.

NOTE: if your pest control is not effective recommend changing providers

Observation: Some droppings observed in the retail section areas again -under the shelving units and where the contaminated cookie packages found "Stark" brand
Corrective Action(s): Operator to go through ALL the foods for contiminated product and discard
Do not store lightly packaged foods (ie. soft plastick, paper, nylon) on the bottom shelves -jars, canned goods okay

Clean and sanitize all shelves/floors where droppings are observed
