Observation (CORRECTED DURING INSPECTION): No sanitizer solution prepared during the inspection.
**Issue corrected at the time of inspection** Chlorine sanitizer bucket prepared at the time of inspection. 200 PPM chlorine residual detected from the sanitizer bucket.
Corrective Action(s): Always prepare a container of sanitizer solution before starting food prepartion so it is readily available to sanitize all food contact surfaces when required.

Observation: 1. Cartons of raw eggs stored above cooked food (chicken) in the walk-in cooler.
2. Containers of food stored uncovered in the walk-in cooler.
Corrective Action(s): 1. Re-arrange the raw eggs so they are stored below the cooked food in the walk-in cooler.
Follow the proper storage hierachy for storing food in all refrigeration, freezer and dry storage units. Raw meat and raw eggs must be stored below cooked or ready-to-eat food to prevent potential cross contamination.

Comments

Routine inspection conducted today:
Handwash sinks equipped with hot and cold running water, liquid soap and paper towel. Observed staff perform excellent handwashing before the start of his shift.
All refrigeration units were at ≤ 4C.
All freezer units were at ≤ -18C.
High temperature dish machine was able to reach 71C at the plate level during the rinse cycle.
No signs of pest activities noted during the inspection.
Overall sanitation is satisfactory - minor cleaning noted around the cook line.
Operator's FOODSAFE level 1 certificate verified and still valid until June 2022 - renew before the expiry date at www.foodsafe.ca/course/refresher.html
