Move all items (that are stored under 2hrs) to working cooler.
Do not store any other meat in this fridge until it is fixed or replaced.
Only place uncut vegetables in fridge overnight and during the day.

Observation (CORRECTED DURING INSPECTION): Ground beef, large tray >3kg stored out at room temperature for thawing, operator says he keeps it out to thaw between 3-5hrs.
Corrective Action(s): Keep in fridge to thaw or under cool running water.
Operator placed back in fridge. Thank you.

Observation (CORRECTED DURING INSPECTION): Operator does not have sanitizer made up. 0ppm in spray bottle that looks like soap water.
Cloths in use are stored outside of sanitizer.
Corrective Action(s): Store cloths in sanitizer when not in use.
Make sanitizer with bleach available on regular basis (once daily or 2x per week).
Demonstrated making sanitizer in bucket during the inspection.
Operator added some in the spray bottle.
Tested at 100ppm.
Operator also changed new cloths. Thank you.

Operator keeping most items on cook line to 2hrs. Limited quantities are out during lunch rush.
No hot holding at the time of inspection.
