Observation (CORRECTED DURING INSPECTION): Staff stated deli slicer and meat saw were cleaned and sanitized once or twice per daily..
Corrective Action(s): Food equipment such as deli slicer and meat saw must be cleaned and sanitized at least every 4 hours or when visibly dirty. Educate the staff on the proper sanitizing frequency.

Observation (CORRECTED DURING INSPECTION): Bleach sanitizer used in the back prep area measured with a concentration of over 200 ppm.
Corrective Action(s): Ensure to dilute bleach water in between 100-200 ppm. Any higher level than 200 ppm used on food contact surfaces. is a chemical hazardous.

- Display, walk-in and stand-up cooler maintained at 4C or less.
- Walk-in freezer maintained at -18C.
- Hand washing stations provided with hot/cold running water, liquid soap and single use paper towels.
- 200 ppm quats sanitizer available from the dispenser.
- 3 compartment sink set up for manual dishwashing.
- Food storage practices satisfactory.
- General sanitation satisfactory.
- No pest activities observed at the time.
- Confirm with the management that temperature records are available for review at the head office. Provide a copy for last month to the Environmental Health Officer.
