-Cut potatoes, sprouts, cut leeks
Corrective Action(s): Discarded the food.

Do not store potentially hazardous foods at room temperature -store in your preparation cooler!

Observation: Low temperature dishwasher has 0ppm detectable chlorine sanitizer residual. Unknown when the last time the dishwasher was checked for sanitizer residual. No daily log sheets available

Corrective Action(s): Fridge/freezer shelves are not regularly cleaned and sanitized.

Leave the foods in the orginal packaging or in clean washable containers.

Observation: Large amount of mouse droppings observed in the Dry Storage room -on the floor under the shelves, on lids of food containers.

A few open bulk foods not in rodent proof containers
Corrective Action(s): Discard all foods contaminated with droppings.

Keep all open bulk foods in rodent proof containers with lids securely on.

Clean and sanitize all areas with mouse droppings -CHECK EVERY MORNING

Have your pest control inspect the facility and work report ready for review upon the follow-up inspection

Observation: An enormous wok in use and stored under the cooking line along with another pot with utensils.

Goods are STILL being stored on the floor in the dry storage room -unable to monitor for pests. No additional multi-level shelves have been added as indicated in the June 6, 2022 routine inspection
Corrective Action(s): The enormous wok does not fit the wash sinks -remove from the premises. All dishware must fit the wash sinks / dishwasher for adequate cleaning

Do not store anything under the cooking line to ease cleaning and monitoring of pests
NOTE: this is a REPEAT infraction from the June 6, 2022 routine inspection

Obtain more multi-level shelves for the dry storage room -store goods off the ground >15cm
