Do not store potentially hazardous foods at room temperature -store in your preparation cooler! Violation Score: 5 302 - Equipment/utensils/food contact surfaces not properly washed and sanitized [s. 17(2)] Observation: Low temperature dishwasher has 0ppm detectable chlorine sanitizer residual. Unknown when the last time the dishwasher was checked for sanitizer residual. No daily log sheets available Corrective Action(s): Repair washer. Corrective Action(s): Fridge/freezer shelves are not regularly cleaned and sanitized. Leave the foods in the orginal packaging or in clean washable containers. Violation Score: 3 304 - Premises not free of pests [s. 26(a)] Observation: Large amount of mouse droppings observed in the Dry Storage room -on the floor under the shelves, on lids of food containers. A few open bulk foods not in rodent proof containers Corrective Action(s): Discard all foods contaminated with droppings. Keep all open bulk foods in rodent proof containers with lids securely on.
