Comments

- All hand washing stations were properly supplied with hot and cold running water, liquid soap, and paper towels
- Bleach sanitizer solution available at 100 ppm - 200 ppm in buckets at the front sushi bar and in the back kitchen - good.
- High-temperature dishwasher reached 71C at the dish surface during the rinse cycle - good
- All coolers were measured at 4C or colder
- All freezers were measured at -18C or colder
- All hot-held food items were measured at 60C or hotter
- Accurate thermometers were available. Temperature records well maintained and up to date.
- Food storage practices satisfactory. All food properly covered and stored off the floor. *Ensure pre-portioned dishes (for miso soup) are not stacked directly on top of one another, as the bottoms of containers handled by hands could potentially contaminate the pre-portioned food.
- General sanitation is satisfactory. Ice machine maintained in sanitary condition. Scoops properly stored. In-use rice scoops stored in ice water.
- No signs of pest activity noted at time of inspection.
