Note: Clean towels stored in 100ppm chlorine sanitizer solution in buckets all in the mop sink area. Relocate these containers to the food preparation area for easy access for staff involved in food preparation.

All hand sinks provided with liquid soap and paper towels.
200ppm quats dispensed at 3 compartment sink. 200ppm quats available for use in labeled spray bottle.
3 compartment sink setup for manual ware washing.
Dishwasher registers 50ppm chlorine during the final rinse cycle.
Walk in cooler at 2 degrees C.
Walk in freezer at -17 degrees C.
Secondary shelf life chart maintained and available for review.
