Routine check of King's Banquet.
Hot meals provided on Tuesday dinner (after 4pm).
Turkey goulash - cooked temperature >74 C.
Rice - fully cooked and put in pre-heated hot holding unit - rice temperature slightly below 60C (measured 56- 58 C internal temperature), Rick is served within 2 hours (follow your food safety plan).
Food handlers are wearing aprons and hair restraint.
Hand washing sink has liquid soap and paper towels.
Coolers are both at 4 C or colder and thermometers are provided.
Keep fridge and food temperature records.
Dishwasher has a hot water sanitizing rinse (>180F measured at the gauge and >160F measured inside of the machine - good).
Chlorine bleach sanitizer in spray bottle should be 200ppm. Today it is higher than that. Use 1 tsp (5mL) of domestic bleach in 1 litre (1000 mL) of water OR 2 mL per 500mL of water. Make fresh daily.
Spray bottle is labelled. Do not breathe in spray.
At least one person per shift has Food Safe level 1.
Note: Food Safe Level 1 certificates now expire after 5 years. For those who have a certificate from before August 2013, certificates must be renewed to be valid.
