Observation: 1. Black organic buildup noted in the interior of the ice machine.
2. Dead fly and debris noted in the containers holding clean utensils.
Corrective Action(s): 1.Discard all the ice and clean and sanitize the interior of the ice machine as per the manufacturer's instruction.
2. Rewash and sanitize all utensils in the containers and clean out the containers before putting the utensils back in these containers.

Observation: 1. Around 10 fresh mouse droppings noted in the cabinet below the front of house sink.
2. A couple of flies noted in the back room.
Corrective Action(s): 1. Sweep, clean and sanitize the cabinet below the front of house sink. Alert your pest control company and continue to monitor for activity.
2. Ensure no stagnant water is available for the breeding of flies. Keep the back room clean and continue to work with the pest control company to mitigate and eliminate pest issues.

Observation: 1. Dust buildup noted along the coil of the dish sink sprayer.

Routine inspection conducted today:
Handwash stations accessible, equipped with hot and cold running water, liquid soap and paper towel.
All refrigeration units were at 4.0C or below.
Note: One of the upright refrigerators in the back of house (milk refrigerator) was noted filled with 4 L milk cartons on the top shelf, blocking cool air flow to the bottom of the shelf (nothing was stored below the milk cartons shelf at the time of inspection). Top shelf was noted at 4.0C, however anything below this shelf was noted at 15.0C. Please re-organize cooler to allow for better cool air circulation.
All freezer units were at -18.0C or below.
QUAT sanitizer spray bottle was noted with 200 PPM QUAT.
High temperature dish machine was able to reach 71.9C at the plate level during the rinse cycle.
