Observation: Sanitation: Food/debris noted behind and under equipment - bake shelving/display, behind dough mixer, behind/under fume hood/oven, under/behind ice machine, etc. Brooms/mops being store in kitchen prep area. Service carts soiled with food debris.
Corrective Action(s): Clean and organize entire facility. Pull all items away from walls - clean behind/under equipment. Remove all unused items. Store all items in designated areas.

Comments

Routine cleaning schedules (ie: daily, weekly and monthly) are to be established and followed. Ensure facility is being kept clean and organized. All items are to be stored in designated areas. Personal items/cloths are not to be stored inside refrigeration units! All cleaned and disinfected implements are to be stored in a sanitary manner, in order to prevent post contamination.
