209 - Food not protected from contamination [s. 12(a)]
Observation (CORRECTED DURING INSPECTION): Two paper bags of powdered sugar located within rolling food storage bin were observed to be covered with mould on the bottom exterior of the bags. Note: No other food stored in this bin. Food stored in adjacent bin was not affected.
Corrective Action(s): Both bags (including contents) discarded. Ensure food is covered and protected from potential contamination at all times. Immediately clean spills / remove moisture, and allow surfaces to fully air dry after sanitizing.

306 - Food premises not maintained in a sanitary condition [s. 17(1)]
Observation: 1. Build up of food and other debris on surfaces (floors, floor-to-wall junctions, shelves, wire racks, cupboards, inside rolling storage bins, behind equipment) observed in both front and back areas of the restaurant.
2. Rodent droppings observed on floor under wire storage rack located near back door. Note: No other droppings or signs of pest activity observed, and most recent pest control report dated October 17, 2022 indicated no pest activity. Back door is closed and no gap observed. Pest droppings may not be recent and are located in a hard-to-reach area with other debris.
Corrective Action(s): 1. Ensure all of the above-noted areas are thoroughly cleaned and sanitized. Food debris may potentially attract pest activity and may potentially increase the risk of food/equipment/utensil contamination. Date to be corrected by: November 1, 2022.
2. Ensure all droppings are properly removed and affected areas are thoroughly cleaned and sanitized. Date to be corrected by: Today.

- Freezers satisfactory.
- Hot holding internal food temperatures at 60 degrees C or more.
- Raw and ready-to-eat properly organized.
- Hand sinks are accessible and supplied with hot and cold running water, liquid soap, and paper towels.
- Quaternary ammonium compounds (quats) sanitizer available from dispenser at three compartment sink and in sanitizing buckets/containers at 200 ppm. Wiping cloths stored in sanitizer when not in use.
- High temperature dishwasher measured 75 degrees C at the utensil surface during the final rinse (minimum required: 71 degrees C at the utensil surface).
- In use utensils stored in ice water.
- Unable to review some temperature and sanitation logs (electronic system) at time of inspection. Ensure temperature and sanitation logs are maintained as per your food safety and sanitation plan.
