Observation (CORRECTED DURING INSPECTION): Gravy and mash potatoes were being hot held at 45.5C and 22.0C respectively in hot holding units.
Corrective Action(s): It appears that food is brought from the cooler and store in hot hold units without proper reheating.
**Issue corrected at the time of inspection** Staff reheated the gravy and mash potatoes in the microwave during the inspection.
Going forward, food handlers must ensure that food intended for hot holding MUST be reheated in a stove/ oven/ microwave or any other accpetable cooking method to at least 74.0C prior to storing in a preheated hot hold unit.
Hot hold units are not able to bring up the temperature of hot food to the desirable temperature quickly enough for proper hot holding.

Staff refilled the sanitizer spray bottle - 400 PPM QUAT detected.

Observation: Raw eggs noted stored above whole tomatoes in the walk-in cooler.
Corrective Action(s): Reorganize the storage hierarchy in the walk-in cooler to ensure produce and ready-to-eat/ cooked food are stored on a higher/ separate shelf away from raw food, including raw eggs.

Observation: **Note: This is a repeat violation** Cardboard still noted being used as a liner for the small Rocket Express oven.
Corrective Action(s): Operator MUST remove the cardboard as cardboard is not a suitable material for liner. All surfaces in a food premises must be smooth, easily cleanable and imprevious to moisture.

Routine inspection conducted today:
Handwash stations, including washroom, accessible, equipped with hot and cold running water, liquid soap and paper towel (blow dryer in the washroom).
All refrigeration units were at 4.0C or below.
All freezer units were at -18.0C or below.
Fried chicken was being held at over 60.0C.
Food contact items noted in good condition and sanitary.
Sanitizer spray bottles available throughout the prep area. Most (except for one spray bottle), including wall mounted dispenser, was noted with 400 PPM QUAT.
Drain plugs available for the 3-compartment sink for manual warewashing.
No signs of pest activities noted during the inspection.
Overall sanitation and organization acceptable.
