Comments

General sanitation of kitchen is overall excellent. Temperature logs are being maintained. A new sanitizer dispenser has been installed in kitchen. No rinse Quat sanitizer measured between 400-600 PPM quat residual in bottle and at dispenser. Please reduce to 200 PPM Quat residual as per manufacturers instructions. Operator to dilute bottles and test with test strips until company can adjust concentration at dispenser.
