Follow up inspection today to check the commercial dishwasher. Today, commercial dishwasher has a hot water final sanitizing rinse (200 F measured on the gauge and >160 F measured inside of the machine). Daily records are being kept for dishwasher and are satisfactory (checked for this week). Cleaning of serveries not checked today. Follow a routine cleaning schedule. Check caulking around hand sinks and replace if there is a gap so that it is easier to clean.
