Observation:
1) The first faucet (closed to the drainboard), of the 2-comp sink, constantly leaks. This will attract and harbor pests, with the damp conditions.
2) The second faucet's hot water tap doesn't fully turn off. The hot water supply has been turned off to the tap, due to this. Running hot and cold water requires to exit all faucets at all times, to allow proper washing and sanitizing of dishes.
3) The 2-comp sink basins are leaking, as there is pooling water on the beneath the sinks, and there is a bucket catching the water. This will attract and harbor pests, and it will cause water damage to the floor tiles and walls.
Corrective Action(s):
1) Repair or replace the first faucet so it doesn't leak.

2) Repair or replace the hot water tap on the faucet so it can fully turn off the hot water. Open the hot water supply to the tap and keep it on/open at all times.

Comments

A routine inspection was conducted, the following observations were made:
- Cooler was 1C; freezer was -18C; thermometers present; and temperatures monitored daily.
- Hand sinks stocked with liquid soap, paper towels, and running hot and cold water.
- Bleach sanitizer in spray bottle had [Cl2] of 200ppm.
- All foods stored in food grade containers; covered; date coded; labeled; stored in groups with raw proteins on lowest shelves below RTE foods; and stored 6" off the floor on shelves or platforms.
- No expired food found. FIFO rules being followed.
- General sanitation level is good. The exhaust canopies were professionally cleaned in Feb. 2019 and next cleaning is July 2019 (as per service sticker). The grease interceptor was serviced in Feb. 2019 and generally done every 4 months.
- Improvement noted with the premises being less cluttered. Ensure to remove unused/broken/extra equipment or pans to allow easier cleaning of the facility, and to discourage pest hiding and harborage areas.
- No signs of pests. Abell Pest Company contracted to monitor for pests on a monthly basis.

**Remember, single use items (aluminum foil pans) shall only be used once and then thrown away. These items are not made of a durable material and will break/tear (pieces could fall into food) or release chemicals into food when used more than once, and/or exposed to soaps and sanitizers.**
