Routine inspection due to ownership change
- Coolers below 4C; freezers -21C or colder;
hot holding units above 60C; and thermometers present
- High temp. dishwasher had rinse cycle temp. of 81.7C at plate's surface.
- Hand sinks stocked w/liquid soap, paper towels and running hot + cold water
- Foods stored in food grade containers; covered; labelled; date coded; foods stored in groups; and stored 6" off the floor.
- No expired foods in use and FIFO being followed
- FoodSafe certified staff present
- FSP + SP approved
- General sanitation level is good.
- No signs of pests.
- Cheque for the yearly permit fees obtained in the amount of $37.50
- Exhaust canopy + filters clean. Professionally cleaned in August 2023 next service due March 2024.
- Bleach sanitizer in cloth buckets + spray bottles had [cl2] of 200ppm.
ACTION
1) Peel off all plastic protective cover on shelves, equipment (cooler door) and doors. The surfaces are cleanable, the plastic is not.
2) Remove all cardboard on shelves in the walk-in-cooler as this is preventing proper air flow.
3) Cardboard, newspaper, foil covering shelves or surfaces must be thrown away every night.
4) Remove the plastic rice bags covering shelves or surfaces must be thrown away every night.
5) The ice machine parts have mildew on them. Remove all ice and then wash the parts with hot soapy water, then sanitize with bleach + water solution.
6) Have more staff get the FoodSafe Level 1 certificate.
7) More detailed cleaning of allmetal shelving racks, floors under all shelving racks, and the exhaust filters require to be cleaned more frequently an don a regular schedule.
