Observation (CORRECTED DURING INSPECTION): Noted food handlers are not changing disposable gloves after touching contaminated surfaces or changing duties - they were washing their gloves instead??
Corrective Action(s): - Remove and discard the contaminated gloves - wash hands and put a new pair of gloves any time gloves gets contaminated ( touching contaminated surfaces, changing duties , touching raw animal products ....)
-Educate food handler regarding proper glove usage ( no bare hand contact with ready to eat products - changing gloves after any contamination)

Observation: Rodent dropping still noted in some areas mostly under/behind equipment and dry storage are /sushi bar area
Corrective Action(s): - Pest control service - once per week is still required- DO NOT REDUCE THE SERVICE UNTIL DIRECTED BY THE AREA INSPECTOR AFTER EVALUATION OF THE FACILITY

Comments

- Handwashing stations are equipped with hot and cold running water, liquid soap, and paper towels
- Coolers (walk-in, sushi, prep, stand-up, under counter) are </=4C
- Freezers (walk-in) are </=-18C
- Hot holding units are >60 oC with exception of sushi rice warmers- were not in use at the time of inspection. Ensure they are capable of maintaining food at 60C or greater
- High temperature dishwasher is available.
- Final rinse temperature reached 76 oC at the plate level
- 100ppm bleach sanitizer is available in buckets with wiping cloths.
- Dry storage areas are satisfactory
- Ice machine is ok
- Ventilation hood is ok

Met the owner discussed all noted issues.

Send an action plan addressing noted issues no later then March 12-2024 to the attention of the area inspector via email.
