Observation (CORRECTED DURING INSPECTION): Three reusable wiping cloths noted stored on paper towel dispensers and on counters in the premises.
Corrective Action(s): Ensure reusable wiping cloths are stored in sanitizer solution to prevent microbial growth.

Observation (CORRECTED DURING INSPECTION): No paper towel available in dispenser at hand sink in the front area. Paper towel available in dispenser mounted on walk in cooler, before the prep table. Also, did not note soap at three compartment sink but paper towel dispenser was mounted in the walk in cooler at this area.
Corrective Action(s): Ensure paper towel dispensers at hand sinks are stocked at all times. Also, ensure soap is available at the three compartment sink so that staff can wash hands between handling dirty and clean dishes.

Corrective Action(s): Operator to look into installing a proper tap at three compartment sink as part of structural operational upgrades.

2 hour time tracking posted for each pizza as per corporate food safety plans - no concerns.
Probe thermometer available on site to check internal temperature of foods. Ensure probe is sanitized between uses.
Good general sanitation. No obvious sign of pest activity noted at time of inspection. Back door was closed at time of inspection.
Chlorine sanitizer in spray bottle 100ppm.
Manual ware washing procedures reviewed at time of inspection – no concerns. Drain plugs available. Chlorine test strips available to verify sanitizer concentration.
Pans sent for warewashing to commissary at head office location once every 6 months.
Only 6 wooden boards on site. Staff said they are never used. Wooden boards on site appear to be in good condition (no stains, cracks or chips). Wooden boards are intended to be serving trays not plates (ie. not a food contact surface). Wax paper on site.
All stored foods appeared protected (ie. stored off the ground, covered light covers in place..etc)
Discussed serving food outside. Staff said this has been done twice since opening and is organized by head office - not the store. Have store owner and/or head office contact the undersigned re: serving food outside.
