Observation (CORRECTED DURING INSPECTION): Dishwasher did not dispense any chlorine residual at time of inspection.
Corrective Action(s): All plates and utensils were run through the dishwasher and immersed in a solution of 50 ppm chlorine residual for two minutes (inside the sanitizing compartment of the three-compartment sink). Use only paper plates (shown to EHO at time of inspection).

Kitchen supervisor has agreed to immerse all utensils inside the chlorine solution to be appropriately sanitized. A follow-up inspection will occur tomorrow to ensure that the dishwasher has been repaired.

Observation: Low-temperature dishwasher is not releasing any chlorine residual.
Corrective Action(s): Repair or adjust the low-temperature dishwasher so that it releases 50 ppm chlorine residual at the final rinse cycle. Only single-use cups and plates are to be used. All items run through the dishwasher are to be sanitized in a minimum 50 ppm chlorine residual (or equivalent) sanitizing solution.

Follow-up inspection conducted. Facility is in improved sanitary condition:
Rodent droppings identified in previous inspection have been removed
Dough mixer remains in good sanitary condition after use
Mop sink area has been significantly decluttered - good
A new prep cooler has been obtained and reached 2C (bottom) and 4C (top). Top lids were present to retain cold air in the unit.
All products inside walk-in cooler were appropriately covered when not in use

CORRECTION ORDER issued for dishwasher unit. Follow-up inspection to occur tomorrow to verify that the dishwasher is functioning.
