Comments

- Kitchen not in operation at time of inspection.
- Small amount of food on-site at time of inspection.
- Walk-in cooler measured to be at 4C. Prep cooler and display cooler not in use at time of inspection. Ensure both coolers are capable of maintaining temperatures of 4C or colder before using.
- Walk-in freezer measured to be at -23C
- Hot holding unit not currently in use. Ensure hot holding unit is capable of maintaining temperatures at 60C or hotter before using.
- Accurate thermometers avaialble
- Low-temperature chemical dishwasher dispensed 100 ppm chlorine to dishes. *Obtain test strips from dishwasher company for daily monitoring of sanitizer concentration.
- Bleach sanitizer solution available at 100 ppm in spray bottles. Reminder to change solution in bottles regularly.
- Hand sink in kitchen equipped with hot and cold running water, liquid soap, and paper towels. When in operation, ensure hand sink is always accessible for hand washing. Do not store any items in this sink.
- Ensure any food prep in sinks is done in the designated two-compartment sink.
- Pest control report for this month was available on-site for review. Good. Continue with monthly pest control services and keep all reports on-site.
- Floors in back storage area have been re-finished. Good.
- Continue cleaning out back storage area and monitoring for pest activity.
