Observation (CORRECTED DURING INSPECTION): Three trays of ready-to-eat pizza stored at room temperature; food temperature was 24 degrees Celsius. Operator stated that pizza had been there for approximately half an hour.
Corrective Action(s): Do not store potentially hazardous foods at room temperature. Keep foods below 4 degrees Celsius or above 60 degrees Celsius as discussed..

Observation: Some double stacking of containers observed in walk-in cooler. The bottom of one container could contaminate the food content of the container it rests in.
Corrective Action(s): Do not double stack containers. Keep foods covered in food grade containers, protected from contamination.

Comments

- Food preparation hand sinks and staff washroom hand sink are adequately stocked
- Pizza prep table (top and bottom); walk in cooler, and drink cooler hold below 4 degrees Celsius
- Front chest freezer and standing freezer hold below -18 degrees Celsius
- All foods are stored off ground; no signs of pest activity observed during inspection
- No major food debris/grease accumulation noted during inspection
- Working thermometers present to monitor safe food handling temperatures
- 100ppm chlorine solution available for surface sanitizing in spray bottles and in third sink for manual ware washing
- 200ppm quats solution available for sanitizing wooden island cutting board
- Overall sanitation is satisfactory
