Observation: Unfinished wooden board above dishwasher still has not been sealed or replaced.
Corrective Action(s): Repeat violation. All surfaces must be finished/sealed such that it is easily cleanable and nonabsorbent. Either seal this wooden board or replace with nonabsorbent material. Failure to correct this will result in further enforcement actions.

Comments

- Additional hand sink has still not been installed in the main kitchen area. Discussed with operator; hand sink must be installed by due date set by previous inspector during previous inspection.
**Failure to have this hand sink installed by the next follow-up inspection will result in further enforcement actions (such as the issuance of orders and/or violation tickets).

- All coolers were measured to be at or below 4C, and were equipped with accurate thermometers.
- Dry ingredient bins had properly fitting lids, scoops were not being stored directly in dry ingredients
- Quat sanitizer was available in spray bottle at 200 ppm. Ensure to replace with fresh solution on a weekly basis if not used up.
- Two compartment sink temporarily set up as hand washing station. Liquid soap and paper towels available.

**Follow-up inspection will occur on Thursday, October 12th. New hand sink must be installed and functional. Wooden board above dishwasher must be replaced or sealed.
