Observation (CORRECTED DURING INSPECTION): Wiping cloths stored on the table at ambient temperatures. This allows the growth of pathogens on the wiping cloths and the spread of them

Observation (CORRECTED DURING INSPECTION): 1) Equipment/utensils/ food contact surfaces were only sprayed with quat sanitizer bottle.
2) Later in the inspection, an employee was observed washing and rinsing a scoop to be then placed onto the air drying rack to be stored with other apparently sanitized utensils. Another employee went to the same spot to grab the scoop to be used for handling food. No sanitizer used.
3) Premises is not following 3 compartment sink method.
Corrective Action(s): Proper 3 compartment sink method must be followed. Rewash and sanitize all equipment/utensils/ food contact surfaces. Equipment, utensils, and food contact surfaces that are not sanitized cannot be used. Correction order issued.

Observation: Black garbage bags used to wrap food in walk in cooler and freezer. Black garbage bags are not food grade and not intended as a food contact surface for handling food for human consumption. 1 black garbage bag used for dough in walk in cooler. 2 black garbage bags in freezer for unknown food item as stated by manager.
Correction: Discard foods stored in black garbage bags. Do not store foods in black garbage bags and use food grade materials moving forward. Do not serve or handle foods stored in black garbage bags.

Equipment/facilities/hot & cold water for sanitary maintenance not adequate [s. 17(3); s. 4(1)(f)]
Observation: No dishsoap or sanitizer was noted on premises. Manager stated that both ran out yesterday. Equipment and food contact surfaces sitting in sink are not sanitary yet.
Correction: Ensure dishsoap and sanitizer is available on site at all times. Manager stated supplies will be delivered 2pm at the latest

Code 401 noted on Routine inspection # RLAM-CKBQ2R of Oct-18-2022
Adequate handwashing stations not available for employees [s. 21(4)]
Observation: Sole handwash sink in kitchen does not have paper towels or any other acceptable drying method. Manager stated this ran out today before 11am when the kitchen opened
Correction: Ensure all handwashing stations are fully equipped with hot and cold running water, liquid soap, and paper towels. Manager stated supplies will be delivered today 2pm at the latest. Take papertowels from washroom and transfer into kitchen handwash sink until supplies are delivered.
