Comments

Coolers (line coolers, walk in and front service dining area) are all at 4 C or colder - good. Temperature records are being kept.
Hot holding (cabinet and steam table) - foods are at 60 C or hotter. Time control (2 hours) is also being used.
Metal stemmed thermometer is available for checking food temperatures (sanitize thermometer first).
Cooling of hot foods - reviewed with staff. Ice is used.
Food items are dated.
Dry storage - good. Food is up off of the floor.
Hand sink has liquid soap and paper towels in dispensers at the main kitchen hand sink and front service area hand sink.
Food Safe trained staff on site. Food Safe certificates now expire after 5 years. Uniforms, hair nets, and disposable gloves are worn by food handling staff.
Meat slicer appears to be very clean.
Quats sanitizer is used for sanitizing food contact surfaces and clean-in-place equipment. Wiping cloths are stored in 200ppm quats sanitizer in main kitchen and front service area.
Dishwasher has a final hot water sanitizing rinse (180 F measured at the gauge and >160 F measured inside of the machine) - good. Temperature records are kept for the dishwasher.
Premises is well organized.
