Observation:
- Plates stored in the lower shelves observed with stains & food debris.
- Ice machine observed with grime build up.
- Utensils and knives put away for storage observed with debris.
Corrective Action(s):
- Clean and sanitize the items noted above. Ice machine should be turned off and emptied before cleaning & sanitizing. Ensure all equipment and utensils are clean when put away for storage. Recommend not storing plates in the bottommost shelves OR cover them to prevent potential contamination.

302 - Equipment/utensils/food contact surfaces not properly washed and sanitized [s. 17(2)]
Observation:
- Some of the sanitizers in plastic buckets had no detectable chlorine or chlorine level below 100ppm.
- Glasswasher did not detect any sanitizer (chlorine) - chlorine bucket was almost empty and no extra bottle was available at the time of inspection.
Corrective Action(s):
- Manager replaced weak sanitizers at the time of inspection. Unscented bleach available on site.
- Manager ordered new bottles for dishwasher chlorine. Ensure to use high temperature dishwasher until glasswasher is capable of dispensing 100ppm chlorine during the final rinse.

Observation (CORRECTED DURING INSPECTION):
REPEAT VIOLATION: Handwashing sink filled with strainers and other utensils - sink was not readily available for handwashing.
Corrective Action(s):
- Ensure handwashing sinks are accessible at all times. Ensure employees are washing their hands frequently as needed.

Observation:
- Fruit flies activity observed in the following areas: back wire shelving storage area near fire extinguisher, tea bar next to dishpit.
Corrective Action(s):
- Ensure to follow recommendations indicated in the pest control report (clean & treat the floor drains, ensure kitchen floor is kept dry). Wipe any food/ sticky residue on containers and surfaces in above noted areas. Consider installing fly light traps in these areas.

Observation:
- Slime build up observed near the crab tank (where the pump is).
- Water pooling observed underneath glasswasher.
- Grime build up observed in majority of sinks (prep sinks, handsinks, 3 compartment sinks in both front and the back kitchen)
- Food debris and garbages observed underneath equipment.
Corrective Action(s):
- Pool out coolers and tables to clean hard-to-reach areas in the kitchen. Floors will be checked during the follow up inspection.
- Clean all sinks to remove grime build up.
- Clean and dry the floor underneath the glasswasher. Look out for any potential leak from the equipment and repair if needed.
- Clean the floor and the piping near the crab tank.

- Observed lots of cardboard in use to line the dry storage racks.
Corrective Action(s):
- Do not use cardboard as liners. Discard the cardboards. Use a material that can be easily cleaned and non-absorbent (plastic, metal etc.)

Biweekly pest control by Ecolab.

*Excessive foaming observed on top of the fishtank facing the dining area. Ensure proper maintenance is in practice to remove/prevent foam.
