Observation: During time of inspection,
1) Onions observed being stored on floor in milk crate
- Corrected during time of inspection
2) Various foods not kept wrapped or sealed in prep cooler
Corrective Action(s): 1) Ensure that no food products are stored on floor, must be at least 6" off the ground
2) Ensure that all foods are kept covered with lids or with plastic wrap to further prevent cross contamination

306 - Food premises not maintained in a sanitary condition [s. 17(1)]
Observation: During time of inspection:
1) Fan covers and surrounding in walk-in cooler in need of cleaning
2) Area around door seals/gaskets of walk-in cooler had grime accumulation
3) Slight debris accumulation observed underneath shelving of walk-in cooler
4) Debris accumulation observed underneath dry storage area holding dry goods
5) Caked on food residue observed on mixing component and at wall where mixer is located
6) Cleaning required underneath shelving of take-out area
7) Heavy grease accumulation observed on metal slats/ baffles of commercial fume hood
- Staff informed that professional service will be coming in the next few days
Corrective Action(s): 1-6) Ensure to wipe down, clean and sanitize the above noted, ensure to maintain on a frequent basis
7) Ensure that grease accumulation is removed from slat
Ensure to clean and maintain commercial fume hood on a regular basis
Get staff to clean if necessary

- All temperatures meet health requirements:
* Front display cooler at 4C
* Walk in cooler at <4C
* Upright freezer at -18C
* Chest freezer at -18C
* Prep/ line cooler at 4C
* Hot holding unit maintain food temperatures of >60C
- Chlorine sanitizer solution available during time of inspection, concentration at 100ppm, wiping rags stored within
- Adequate supply of liquid bleach available on-site
- High temperature dishwasher available, adequate sanitization temperature reached via hot water (73C)
- No signs of pest activity detected during time of inspection
- APC Pest Control Services (PCO) services facility on monthly contract, last report (Sept 29 2016) identified no issues
