- Follow-up to inspection conducted on January 8, 2024 (Report #YTAN-CZATBW).
Dishwasher:
- Low-temperature chemical dishwasher has been serviced and is now achieving 100 ppm chlorine residual (detected at the dish surface after final rinse cycle).
- Chlorine test strips available onsite. As discussed, reminder to check your dishwasher with chlorine test strips every morning. If chlorine residual is not at least 50 ppm and the dishwasher cannot be immediately repaired/serviced, then staff must know how to manually wash/rinse/sanitize equipment and utensils, and the sinks must be properly set up for manual warewashing.
- If during future inspections your dishwasher is not working and utensils and equipment are not being properly washed/rinsed/sanitized, enforcement action will be taken (such as the issuance of violation tickets).
Other Corrections:
- Dry storage room has been deep-cleaned. No mouse droppings noted at time this. Ensure to monitor for new droppings/activity on a daily basis.
- No food stored in staff washroom.
- Food-related equipment has been relocated from the staff washroom to the dry storage room. If any equipment is not needed, remove from facility.
