Dishwasher registers 73 degrees C at the plate surface during the final rinse cycle.
Both preparation cooler across the cooking line inserts and lower sections at or below 4 degrees C.
Hot holding at or above 60 degrees C. Reheating done on stove or microwave. Reminder to verify final reheating temperature, 74 degrees C for at least 15 seconds.
