Observation (CORRECTED DURING INSPECTION): Red sauce stored by the dough mixer was found to have significant mould growth on the surface of the sauce.
Corrective Action(s): Foods must be protected from container. Foods with mould are not fit for consumption and must be discarded. Red sauce was discarded at the time of inspection.

Observation (CORRECTED DURING INSPECTION): Operator was unable to prove source of yogurt. Yogurt was stored in a "Bunge" containers. Only invoice available on-site was for yogurt from Nanak Yoghurt (1 - 15kg container). Operator stated invoice was sent to accountant.
Corrective Action(s): All foods in a food premise must be obtained from an approved source. Yogurt was initially placed on hold and operator elected to discard yogurt. Invoices for products must be retained on-site. Digital copies of invoices can also be retained as proof of approved source.

Observation: Scoops were stored inside food containers throughout the facility.
Corrective Action(s): Ensure scoops are stored in a sanitary manner to prevent potential contamination of ingredients.

Observation: Rodent droppings (rat) were found in the dry storage rooms (dining area) and by the back dough mixer.
Corrective Action(s): Contact professional pest control services to mitigate pest infestation. Disinfect affected areas using a 1:10 bleach solution.

Observation: Wall by back chest freezer was found to be broken and food debris is accumulating inside the space.
Corrective Action(s): Repair wall and ensure facility is maintained in good condition. Accumulating debris may also attract pests.

Observation (CORRECTED DURING INSPECTION): 1) Aluminum foil covering baskets is reused throughout the day.
2) Three empty, used plastic zipper seal bags were found stored in the back chest freezer.
Corrective Action(s): 1) Aluminum foil is intended for single use and not to be reused throughout the day. Aluminum foil must be discarded after each use. Aluminum foil was discarded at the time of inspection.
2) Zipper seal bags are intended for single use. Zipper seal bags cannot be cleaned and sanitized. Zipper seal bags were discarded at the time of inspection.

Comments

-Walk-in cooler was at 4C.
-Prep cooler was at 4C (top and bottom).
-Front sweets cooler was at 4C.
-All three chest freezers (kitchen, front sweets area, and dry storage area) were at or below -18C.
-Undercounter freezer was at -9C.
-Sauces were cooled in shallow bus pans and were probed at 4C.
-Chemical dishwasher had a final rinse of 50ppm chlorine on the dish surface (minimum 50ppm required for proper sanitizing).
-Handwash station accessible and supplied with hot and cold running water, liquid hand soap, and single use paper towels.
-Bleach sanitizer pail labelled and tested at 100ppm.
-Food items covered and stored off the floor. Food placed on the top of the display cooler covered with plastic wrap.
-General sanitation satisfactory at the time of inspection, other than rodent droppings
-Washroom clean and well maintained.
-Operator has valid FoodSafe Level 1 (valid until 2023).
