Observation:
A 2-compartment food preparation sink is only present for warewashing. Food processing premises require a minimum of one, 3-compartment sink for warewashing and additional sinks for food processing. Dishes and utensils are not being washed and sanitized correctly using a 2-compartment sink. Pathogens will survive and possible make people sick.
Correction:
Immediately cease and desist all food processing in the premises. Contact your local EHO to determine the requirements to obtain health approval to process food in the premises.

Observation:
A designated mop sink is not installed for sanitary maintenance of the premises. Mop buckets and dirty mop water can not be safely disposed of in the current set-up, as the existing 2-comp sink (which is used for food processing) will be used. Food could become contaminated with the dirty mop water.
Correction:
Immediately cease and desist all food processing. Contact your local EHO to determine the requirements to obtain health approval to processs food in the premises.

Observation:
There is no designated hand washing sink installed in the food premises. Staff are unable to wash their hands properly or frequently when they become dirty. Staff could contaminate food.
Correction:
Immediately cease and desist all food processing. Contact your local EHO to determine the requirements to obtain health approval to process food in the premises.

A follow-up inspection was completed:
- Owner returned the premises to the original approved floor plan.
- All food processing equipment, cookware, utensils, and work tables removed.
- All foods have been removed from the premises.
- There were a few upright coolers and freezers present, but they were empty and not plugged in. The owner is in the process of selling or finding a place to store them.
- The closure order is rescinded, as the owner has completed all the action items.
- The owner stated that he closed the business on Jan. 31/24. He is in the process of sub-leasing the space.
