Observation (CORRECTED DURING INSPECTION): Deep fry batter observed being stored at room temperature. Batter was discarded at time of inspection. No room observed in the undercounter cooler to store the batter when not in use. This is a REPEAT VIOLATION noted in report on Oct 24 2023.
Corrective Action(s): Immediately place fryer batter into the refrigerated cooler after use.
Ensure all staff are aware of this requirement.

301 - Equipment/utensils/food contact surfaces not maintained in sanitary condition [s. 17(1)]
Observation (CORRECTED DURING INSPECTION): Wiping cloths observed on counters when not in use. This is a REPEAT VIOLATION noted in report on October 24, 2023. Containers labelled with" Sanitizer" did not actually contain any sanitizer. One container contained a cleaning solution while the other contained only water.
Corrective Action(s): Bleach solutions set up at time of inspection for wiping cloths and tested at >100ppm bleach.
Recommend using Quat sanitizer as opposed to bleach as Quat sanitizer does not impart any odor to food after wiping down food contact surfaces.

Observation (CORRECTED DURING INSPECTION): Dishwasher initially observed to be dispensing 0ppm chlorine in the final rinse due sanitizer container being empty. Dishwasher monitoring logs show no data recorded for 4 days. When new container was inserted and dishwasher primed a final rinse concentration of 100ppm was measured in the final rinse
Corrective Action(s): Rewash all utensils to ensure they have been properly sanitized as it is unknown when the container ran out of sanitizer
Verify staff are testing and documenting the final rinse concentration daily

Corrective Action(s): Always store raw potentially hazardous food on the lowest shelf to eliminate the possible of dripping onto any ready to eat food items. This is a basic tenat of any Food Safe course

Toaster unit observed with unaccepable food debris build up both on the handle and temperature control knob.

Corrective Action(s): All high touch surfaces are to be cleaned daily ie door handles

Observation: Ice build up observed below condenser inside walk in freezer
Hot water tank temperature set too low (at setting "A").
Corrective Action(s): Contact repair techcnican to fix ice build up.
