Observation: 1) Dishwasher 10ppm residual chlorine, (REPEAT VIOLATION)
2) Bleach solution used at front dining and server area. Operator states the same bottle is used for the back food preparation areas, noted on previous inspection report to obtain a second bottle for the back food preparation for easy access for sanitizing food preparation surfaces.
Correction: 1) Have dishwasher serviced to maintain at least 50ppm residual chlorine.
In the time period until the dishwasher can be serviced, dishes can be washed it the dishwasher, then soaked in a bleach and water solution, 100ppm chlorine for at least 2 minutes and air dried.
2) Create a sanitizer solution to use for sanitizing food preparation surfaces in the back food prep areas.

Dishwasher 10ppm residual Chlorine.
- Ran dishwasher through 2 full cycles, both resulted in a residual chlorine of 10ppm.
Operator stated he has not been able to get a repair person to check the dishwasher because he is in a rural area. Provided testing strips to check dishwasher, operator will have the dishwasher serviced as soon as possible.
- Staff are currently using a bleach dip as a final sanitize step, stated there are very few dishes being washed at the time and is currently washing the dishes in the 2 compartment sink. Bleach dip was tested at 100ppm residual Chlorine, wash dishes in dishwasher or first compartment of sink, then soak in a bleach dip of at least 100ppm residual chlorine for at least 2 minutes, air dry.

Bleach solution available at front dining area over 100ppm residual chlorine, obtain a second bottle to sanitize surfaces in food preparation area. Operator to prepare ableach solution at time of inspection for the back food preparation area. Providing easy access to a sanitizer for wiping surfaces helps support staff with frequent sanitizing in back food preparation areas.
Operator states potato fries slicer had been cleaned and is cleaned daily, slicer must be cleaned and sanitized after each use and/or every 4 hours at minimum. Discussed with operator the importance of frequent cleaning, operator agreed to remove the blades and clean/sanitize between uses. Include as part of the existing sanitation plan.

No salmon/fish observed in the walk-in cooler. Operator had removed it and will no longer store on site or use at the facility to serve to the public.

A follow up inspection has been scheduled for September 9, 2022.
